A world first! Michelin-starred skewered grilled chicken restaurant "TORISHIKI" set to launch original sparkling wine on August 1, limited to just 3,000 bottles
"TORISHIKI ICHIMON" operated by LDH kitchen Inc. (Meguro Ward, Tokyo) has been selling original sparkling wine "MUKADO MTSVANE TRADITIONAL AMBER SPARKLING BRUT NV" in a limited quantity of 3,000 bottles from August 1, 2024. Yoshiteru Ikegawa, the owner of "TORISHIKI", was obsessed with this type of wine and finally realized this special collaboration after many years.
In fact, this project was launched a couple of years ago. It all started when Ikegawa happened to pair his skewered grilled chicken with the aged amber wine "Mukado" from Georgia and then fell in love with such a perfect match. The unique and moderate astringency and tannin of the amber wine countered the oiliness of skewered grilled chicken. Enjoying the perfect match of the special flavor with an aged aroma and the fragrance of skewered grilled chicken, Ikegawa told brewer Lado Uzunashvili, "I want to make wine that goes with skewered grilled chicken," and started this project. In spite of COVID-19 and after several improvements, here finally comes the world's first Georgian amber sparkling wine "MUKADO MTSVANE TRADITIONAL AMBER SPARKLING BRUT NV" that uses Qvevri wine-making method.
Georgia, the place of origin of this wine, is a country renowned for wine. Practised throughout this region, the "Qvevri wine-making method" is the world's oldest wine-making method, which has been recognized by UNESCO in 2013 as part of the world's intangible cultural heritage. In this method, unique grapes of Georgian variety and wild yeast are put together into unglazed earthenware vessels (Qvevri) which are buried in the ground to ferment and age the wine. Georgian wine made in this way is different from the wine from France and Italy. It boasts a heavy sense and a delicate taste, which score it preference of people across the world. Of course, such a feature also has its presence in this wine.
To make the wine go well with skewered grilled chicken, Ikegawa specially chose sparkling wine, which represented his distinct daintiness, "adding resplendence to skewered grilled chicken and making it food for special occasions".
The bottle design is themed upon skewered grilled chicken and Ikegawa's signature fan. It is a stylish item by full use of Japanese beauty. Be sure to enjoy the sparkling wine "specially made for skewered grilled chicken" with endeavor by Ikegawa of "TORISHIKI" which became Michelin 1 Star Restaurant in 2011 and thereby became Japan's representative restaurant for skewered grilled chicken.

Lado Uzunashvili's family has been living by wine-making since the 19th century and even became the winemaker for the last Russian emperor Nicholas II. As the winemaker of the 11th generation, Lado learned cutting-edge wine-making methods while applying cultivation and brewing techniques secretly passed down since 1829. Now his wine-making scope has been expanded to Australia. In addition, he participated in the production of the wine project "Lost Eden" for the Georgian Government and the U.S.A.. He is a top winemaker receiving attention from wine professionals around the world.

It is created after the second fermentation of the aged amber wine "Mukado" that uses Qvevri wine-making methods. The wine sparkling in the color of amber after the aging process mixes the fragrances of dried fruits, nuts, honey and yellow plums. Rather than as an aperitif, it is better to be enjoyed with food for its gentle foam as well as aged aroma and flavor after you slightly sober up during a meal.
